Shredded Chicken
This recipe is PERFECT for a family, does not heat up your kitchen, is freezer friendly and can be used in so many different ways. Quesadillas, over nachos, burritos, tacos, over salad … the list is ENDLESS.
Ingredients
Crockpot
- 2 tablespoons dried parsley
- 2 tablespoons dried oregano
- 2 tablespoons dried thyme
- 3 tablespoons garlic minced
- 2 small red onions, chopped
- 1 green and red pepper, chopped
- 2 tablespoons brown sugar
- ½ tablespoon kosher salt
- 2 teaspoons black pepper
- 1 bay leaf
- 1 15oz jar of salsa (mild or hot)
- 1 4.5oz can green chilies
- 1 14.5oz can diced tomatoes
- 1 8oz jar green salsa
- 4 large chicken breasts
Preparation
- Dump all of the ingredients in your crockpot except for the chicken breasts
- Stir everything until well combined
- Submerge your chicken breasts into the liquid
- If using a crockpot, set on high for 5 hours.
- Take chicken out of the crockpot, shred and place back in to absorb all of the flavors.
- You can either use right away or let cool and portion it out in freezer ziplock bags for future use.

Chili
This is another DELICIOUS meal that is budget friendly (per person lol), can feed the whole family and the leftovers can be used to make other dishes. Sounds like a win-win to me!
Ingredients
- 2 pounds ground beef
- 1 can kidney or black beans, drained
- 1 15oz can of tomato sauce
- 1 28 oz can of diced tomatoes
- 2 onions, diced
- 3 cloves of garlic, chopped or minced
- 2 celery stalks, chopped
- 1 green pepper, chopped
- 1 tablespoon each: dried thyme, oregano and parsley
- ½ teaspoon each: allspice and cinnamon
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
Preparation
- In a heavy bottomed pot or Dutch oven, brown the ground beef for 5 minutes, breaking it up as it cooks. Drain but leave about a tablespoon of oil in the pot. Set meat aside.
- Stir in the onions, garlic, celery, green pepper, thyme, oregano, parsley, allspice, cinnamon, chili powder, cumin, kosher salt and pepper. Sautee for 2 to 3 minutes until the spices are fragrant.
- Place the ground beef back into the pot. Add the rest of your ingredients: beans, tomato sauce and diced tomatoes
- Bring to a boil. Lower the heat, cover and let simmer for one hour, stirring occasionally.
